Naan BLT's & White Corn

BLT’s are at the top of my list for this time of year. Also corn on the cob and white corn is my favorite. I get all my corn from Suter’s Red Wagon, a veggie stand that is here every summer since I remember. They have 10 produce stands around the area. The corn is about all bi-color but have enough white for 2 or 3 days. I think I missed it last year but just had some last night. I I got 6 ears; I blanched and cut the corn from 4 ears, about 20 oz., and saved 2 for supper.

I decided to use some Naan bread for the sandwich and had iceberg lettuce, fresh tomatoes and mayo. The bacon I did on my Traeger and threw on a couple pieces of smoked sausage since I didn’t have that much bacon.

One sandwich was enough but was sure wanting another ear of the white corn!

BLT's on Asiago Ciabata Buns

In my opinion there is no better way to fry bacon than on a pellet smoker. No mess on your stove top and probably better for you since a lot of the fat drains off and it's not frying in it's own fat. I do mine at about 300 deg. grill level and usually takes from an hour to an hour and a half. You also get double smoke dbacon

I had some Asiago Ciabata buns, fresh garden tomatoes and iceberg lettuce to use. My
wife just has mayo on hers. I am more particular, I want mustard on the bottom, 3 layers of bacon, the tomato, the lettuce and mayo on the top.


That sure tasted good and I managed to get a second sandwich down!

BLT's Air Fryer Fries & Corn on the Cob

The warm 65 deg. weather had me hungry for some bacon lettuce and tomato sandwiches. I had almost a pound of Kah Meats thick sliced smoked bacon to use and I found some vine ripe tomatoes that looked decent. I wanted to use just plain white bread. I also had some corn on the cob to steam.

I also wanted to try some Ore Ida fast food fries in my Air fryer. This would be the third time so had to come out good!

I cooked the bacon on my Traeger at about 290 to 300 deg. grill level and took about an hour. I had lightly sprinkled some Savors Pig Candy on it.

When the bacon was done I got the corn in my rice cooker to steam. I preheated the Air Fryer for 3 minutes. I sprayed the basket with some olive oil, added 3 handfuls of fries and sprayed with olive oil.
I had it on Fries at 400 deg. for 13 minutes. I checked them 5 minutes in and stirred then at 10 minutes they were done and the corn was done.


I made my wife’s sandwich with mayo and on mine I had mustard on the bottom slice and mayo on the top slice and had 3 layers of bacon on them.  The tomatoes were not like garden tomatoes but the sandwich was still good. The corn was tender and sweet. I was happy with the fries. If I only use the Air fryer for fries it will be worth it; after I learned how to do them!

My Last Good BLT for the Season

Just another hot muggy day here! I did get the yard trimmed out before it got too hot. I use the hand mower around the perimeter and fence then the grandson does the rest on my rider for me. He came after school and did it and watered the flowers.

We had leftover pork chop, green beans and potatoes we could eat; but I looked at a large and a med. tomato setting in a bowl on the counter. I thought now that’s about the last good tomatoes I will get from my garden so I have to have BLT’s!

A had about a pound of jowl bacon in the freezer so took it out to thaw. I sliced most of it up and got it on my Traeger about 3:30 at 320 deg. grill level. It was done in just an hour. I had one extra thick slice I seasoned with some Super Pig and will have for a snack later tonight or tomorrow. The grandson went home after he did his chores, had plans with Mom & Dad for supper.


I toasted a bun and made up my sandwich. The wife had her bacon and tomato in a lettuce wrap. I know it’s a lot of pics for one sandwich but I wanted to savor this as much as I could. Sure tasted good. I will still be able to get tomatoes a few weeks from a produce stand in town but they are not as tasty as fresh garden tomatoes.

Super Pig Bacon Candy Corn

One of my hobbies is searching the net for new recipes to try. Anything with bacon catches my eye since I love bacon. I don’t care for the extra sweet bacon candy etc. that are popular with a lot of people. I did find I like a light coat of Savor’s Super Pig on bacon and like it for BLT’s too.

I saw one that used brown sugar mixed with corn meal to coat the bacon. I thought now the cornmeal may go well with Super Pig. I had a half pound of Jowl Bacon thawed that needed used. So today after fixing a meatloaf for our supper I did the bacon. I sliced it about ¼ inch thick and coated with Super Pig on both sides. I used a little more than I usually do. I then pressed both sides in the cornmeal.

I did the bacon on my Traeger on a frogmat. I started it at about 250 deg. grill level then after ½ hour eased it up to 300 to 325 deg. grill level. It took just over an hour to get done.

I had to taste a thin slice before the rest were done! Man that is good! For me the cornmeal gives an extra flavor and crispiness to the bacon.


If you can’t buy the Super Pig you can come close by using a little brown sugar and red pepper flakes to taste.

Jowl BLT's, Corn and Potatoes

We finally got some cooler less humid weather. It did get to 83 but not so humid. I needed to go to the grocery and get some fresh picked sweetcorn from Suter’s produce. I planned on some Jowl BLT’s so told the wife I needed to pick tomatoes first to see if I needed to buy some. Like I figured a bunch came on at the same time; I didn’t need to buy any. I had 4 large Big Boys, some Rutgers and plum cherry. I have enough to try Hub’s tomato pie tomorrow.

I had about a pound of my butcher Kah’s good jowl bacon. I sliced it up and coated both side with a little Savor Super Pig. I got it on my smoker a little after noon at about 290 deg. grill level. It took about an hour and 10 minutes to get it where I wanted it. I got it done before the afternoon heat.

I got my batch of kimchi in jars and just relaxed this afternoon sipping on beer and enjoying the nicer weather.

I had some new red potatoes and the corn. I was going to do them outside and steam but got lazy. I steamed the corn in my rice cooker and did the potatoes in the microwave. I added some of my gorgonzola chive butter to the potatoes and we had it on the corn.


My bread was some bolillo buns, I like them since they are light textured and don’t overpower the rest of the stars. I had some mustard on my bottom bun and mayo on the top one. Tasted great a BLT is always good and with fresh corn on the cob even better!

Smoked Jowl Bacon

Crazy Ohio weather, Jan 09 and 50 deg. I was setting outdoors enjoying the warm weather and thought I should be smoking something. I have a freezer almost full of meat I have done this summer and need to use up. I had some jowl bacon in the fridge from my butcher and had planned on using some in beans I am doing tomorrow. I thought I will do up some extra to and do on my Traeger; and set here sippen beer and enjoy some cooking out while I can.

I think I like jowl bacon better than any other and at almost half the cost of regular bacon I use it often.
I cut off two ½ thick slices for my beans and cut the rest at ¼ inch; enough to fill my smoker. I started at 200 deg. about 240 grill level and then went to 250 deg. about 275 grill level. It took about 1 ½ hours to get it where I wanted.


Naturally I had to sample a piece when it was done; food from heaven!!!

Bacon n Mac Slider

My wife went to church and then out to lunch so I fixed myself a good lunch. I fried a couple slices of jowl bacon and cut a square of Dave’s leftover mac n cheese and browned it in the bacon grease. It went on a whole wheat slider bun with a little mustard over the bacon. On the side I had what was left of Billy’s slaw.


That was so good I wanted a second one! I will be making these again but on a large bun!  Great for breakfast, brunch, lunch or anytime!

Bacon, Ham, Eggs, Grits w/Red Eye Gravy

After looking at Ahron’s, (a member of LTBBQ site)  omelet this morning I was glad I had a good brunch planned. I fried some jowl bacon, poured the grease off to brown the ham. I used some of the bacon grease to fry two eggs. I nuked the grits to warm up and made some red eye gravy in the ham skillet. I poured in about a half cup of black coffee and a little coke. I served this over the grits and had some corn bread along with it.


It’s been a while since I made grits with red eye gravy and it sure tasted good!  Some make red eye gravy with just black coffee and some will add a little sour and or sweet. I saw on a cooking show where one chef added coca cola and I like using it.

Super Pig Bacon Twists

I saw this on the net lately; twisting bacon to fry. I had some bacon left to use with shrimp and grits I was having tonight. I thought these would be good dusted with some Savor Spices Super Pig seasoning.

I would do them on my Traeger pellet grill. A pellet grill is ideal for cooking bacon; it cooks all the slices evenly and you can do them to the doneness you like.

I fired up my Traeger and got the bacon out to twist; I had six slices. I dusted it on both sides with the Super Pig and had a little trouble getting it to stay so I secured with some toothpicks. I was using thick bacon and it was cold so maybe bacon at room temp would stay twisted better.

The Traeger was at 200 deg. grill level when I put the bacon on and eased it up to 270 deg. The last 20 minutes I went to 300 deg. I thought I better pull the toothpicks when the bacon was half done. At a half hour I pulled all but the end ones and pulled all on one piece to see how it would stay twisted. In another 10 minutes it looked good so pulled all the toothpicks. I had two tongs I used to pull them. After one hour they looked good so I pulled them off to cool.

I could not resist it I had to try a piece. It was great and as I looked at the bacon I thought now it’s uneven I better have another piece so it’s even for tonight’s supper; two for the wife and two for me!

I had to go down to the kid’s house to let an appliance repairman in and passed the wife on the way down. I called her and ask her to put the bacon in the fridge. I said don’t eat any; it’s for tonight’s supper. I didn’t tell her I had two pieces!

If you don’t have access to Savor Spices for the Super Pig use some brown sugar and crushed red pepper or cayenne pepper. If you don’t have a pellet grill it might do well making them on indirect heat on a charcoal or a gas grill or in the oven at about 300 deg.F.


This is a great way to kick up the looks of your bacon, serve it as an appetizer or along with soup. It would be good with cheese or tomato soup. You can go light on the Super pig for a good flavor or go heavy for some pig candy. Mine were good with my shrimp and grits tonight!

BLT's, Grilled Romaine and Tomatoes

A while back I thought I had the last of my garden tomatoes for a BLT. I had one nice one that was just starting to turn and picked two green ones. After about 4 days the one was ripe and the other two had some green on them. I would fry those.

I had a pound of Kah Meats good thick cut bacon to have and some English toast bread for the sandwiches. I bought some Romaine hearts to do on the grill along with tomatoes. I sliced up the two tomatoes that had some green on; breaded them with flour, egg and Panko bread crumbs and placed in the fridge. Surprisingly they were ripe enough to just eat so I was having fried tomatoes instead of fried green tomatoes!

I did the bacon up on my Traeger. The frog mat will hold ¾ of a pound. After I got them on I sprinkled with a light coat of Savor’s Super Pig. When it was time to eat I cut a Romaine heart in half; sprayed with some olive oil and did them on the Weber Spirit along with the tomatoes. When they were about done I toasted the bread in my toaster lightly.


I made up the sandwiches and we had a balsamic reduction and some parmesan on the Romaine. The BLT tasted great; especially since I thought I had my last one a few weeks ago. We liked the fried tomatoes too.

JBFGT Sandwich

JBFGT sandwich, that’s a jowl bacon fried green tomato sandwich. The jowl bacon is from my butcher Kah Meats. I have seen this on the net and think fried green tomatoes were used to top a burger too. I love both bacon and tomatoes so had to try this.

The grandson had a soccer game an hour south of here so the wife went with them. I hate it that it makes too long of day for my back and leg to go along. At least I can still make his home games to see him play.

After I smoked some peanuts today I found one green tomato in my garden that would do for fried green tomatoes. I don’t like them when they are dark green and still too hard, when they turn a light green or even have a little red they are ready.

I wanted to fry the bacon and tomatoes outside but by 5:00 pm rain was getting too close. I breaded 3 slices of the tomato and in the fridge to set up. I dipped them in flour then egg and then panko bread crumbs. Cracker crumbs used to be my favorite but now I prefer the Panko bread crumbs; some people like cornmeal.

I sliced and fried up plenty of the jowl bacon for my sandwich. I lightly coated the bacon with some Savor’s Super Pig. I don’t care for the pig candy that is made from a heavy coat of Super Pig but found I do like a light coat on my bacon. I then took a beer break, well maybe two!

I reheated the bacon grease and fried the green tomatoes; a minute or two on each side to get a nice golden brown. I lightly toasted some rye bread for the sandwich and had left over tater tots with country gravy for a side. I made the sandwich with mustard on the bottom and mayo on the top slice; plenty of bacon added with the tomatoes on top. I had a good Yuengling beer with it.


That was a great sandwich; I would make it again but think I prefer just a standard BLT and have the fried green tomatoes on the side.

BLT's w/Garden Tomatoes

It was not a good year for my tomatoes. I had six plants in a raised bed garden but way too much rain in early summer. I was finally getting some tomatoes but they were not ripening very well and most had split tops. Looked like I was getting my last batch to pick so that told me I better have BLT’s!

I did up 10 slices of thick sliced bacon from my butcher on my Traeger. I like doing it on the smoker then I don’t have any clean up to do. I had some white bread to use; I would call it an old fashioned BLT. That’s how I remember having them when Mom fixed them. I think she did toast the bread sometimes. I sliced up a yellow and a red tomato for on top and had some iceberg lettuce.

We had asparagus for a side; added some olive oil, lemon juice and seasoning. I did them for 4 minutes in the microwave; tender crisp.


My wife had mayo on hers and I had mayo and mustard. I toasted the bread lightly. Man those were good, probably my last with fresh garden tomatoes for this year!
